Five-Minute Strawberry Lime Sorbet

Winter was making a statement this evening, as it was only 8 degrees outside.  Naturally my thoughts turned to summer, and I decided to whip together a bowl of summer sorbet to escape the winter blues.

The trick to this quick dessert is using frozen strawberries, either from the store or frozen from summer.  Unlike ice cream or sherbet, sorbet typically contains no dairy, making this a good choice for someone who is lactose intolerant or vegan.

You can use any sweetener in this recipe, but consider that honey and other liquid sweeteners may solidify.  I prefer to use no additional sweetener at all, instead relying on the strawberries for sweetness and embracing the tartness of the lime.

Ingredients (serves 2):

  • 2-3 cups of frozen strawberries
  • Juice and zest of 1 lime, minus a few thin slices for garnish
  • Your favorite sweetener, to taste

Directions:

  1. Combine strawberries, lime juice and lime zest into a food processor.  Blend until smooth.  Since strawberries are high is sugar, they do not freeze hard enough to damage the blades.
  2. Taste, and add sweetener and blend until desired sweetness is reached.
  3. Serve right away or scoop into an air tight container and freeze for later.
